Ingredients
  

  • 2 cups water
  • 1 cup red onion, diced
  • 3 tbsp fresh garlic cloves, minced
  • 1 cup tomatoes, crushed or diced
  • 3 tbsp  fresh cilantro, finely chopped
  • salt and pepper to taste

Instructions
 

  • On medium heat, place all the ingredients, except the tilapia, in a large sauce pan
  • Bring to a slight boil, turn heat down to low setting and simmer for about 15 - 20 minutes.
  • Add Fish pieces and cook for another 10 minutes.
  • Remove from heat and set aside until ready to serve.

If you don't have tilapia, you can substitute with halibut,cod or trout. The results are very similar, but if you can find tilapia, it tastes the best.
Serve with Ugali (African Polenta) or Matoke (Steamed Green Bananas/Plantains) and freshly steamed Kale.
