This Moroccan Cucumber Salad is a great for any time of the year, especially during the hot Summer months. Its simple yet refreshing and takes little time to make and it goes well with our easy Couscous and Grilled Lamb Roast recipes.

You can stuff it into a pita with some grilled meat of your choice for a very light and healthy lunch or dinner.

To make this recipe, you will need the following:


2 cups cucumbers (shredded or thinly sliced)
Juice of ½ lemon
1 tbsp olive oil
2 tbsp fresh mint, chopped finely
salt and pepper to taste


  1. Mix all ingredients together in a bowl.
  2. Chill in the refrigerator for about 1 hour before serving.


This is one of our favorite salad recipes! You can serve it in so many ways but it goes especially well with grilled lamb or beef.
