Lamb meat is the preferred meat choice in North Africa and it is often the star of the meal during special holidays and festivities.

To Make this recipe, you will need the following:


2 lbs lamb leg roast
3 tbsp olive oil
1 tbsp fresh mint, chopped finely
2 tbsp balsamic vinegar
1 tsp soy sauce
salt and pepper to taste


  1. Preheat oven to 315°F.
  2. Mix all ingredients with a whisk to create a vinaigrette, except meat and mint, in a bowl.
  3. Place washed meat in a large baking pan and pour mixture over it. Cover with tin foil.
  4. Bake at 315°F for 1 hour. Remove foil and bake for another 20 minutes or longer if desired.
  5. Remove from oven and let rest five minutes before serving.


Serve this roast with couscous and cucumber salad. It's so delicious!
