Ethiopian Iab Cheese is a curd style homemade cheese which usually accompanies other spicy Ethiopian dishes.

The following recipe is similar to the traditional one and is great with most spicy dishes.

To Make this recipe, you will need the following:


1/4 Cup Yoghurt (Plain unflavored)
1 Cup Cottage Cheese
1/2 Lemon, Peel and Juice
2 Tbsp Parsley
Salt and Pepper to Taste


  1. Place all the ingredients in a food processor or a blender and blend until smooth.
  2. You can drain some of the liquid if you prefer a firmer texture.


You can also add more yogurt, omit the parsley and serve with fresh fruit for a snack or a fresh dessert.
