This blackeyed bean dip recipe was inspired by West African flavors and ingredients.

It contains lots of fiber, protein and includes a surprise vegetable.

Use homemade beans for more intense flavors and to increase the nutrition. If you don't have the time, then canned beans will as well.

To Make this recipe, you will need the following:


1 Cup Cooked Black-eyed Beans (Chilled)
1 Tbsp Olive Oil
¼ Cup Onions
1 Clove Garlic, grated
1 Tsp Hot Chili Pepper Flakes
2 Tbsp Fresh Shrimp, chopped (Optional)
½ Cup Chopped Kale (Blanched & Iced)
½ Lemon, Juiced
Salt & Pepper to Taste


  1. On medium heat, heat oil in a medium-sized pan. Add onions and cook until soft. Add pepper flakes and if using shrimp, you can add it at this point. Cook until the shrimp is light pink in color, about 1 minute. Remove from heat then grate the garlic and mix in.
  2. Place all the ingredients, including kale, beans, lemon juice, pepper and salt in a blender and blend until smooth. Or mash the beans and mix in the rest of the ingredients until blended to your liking.


To serve, chop some fresh vegetables into sticks. Place dip in a bowl and top with sesame seeds, it looks really appetizing.

You may also serve it with crackers.
